Recipe as follows:

1/2 cup sourdough starter mixed with 1 1/2 c of warm water. 110 degrees. Mix with a fork.


Continue mixing gently with a fork until it feels dense. Then I flour my hands and continue mixing until it combined evenly.
Adding more flour if needed.

I shape in a round ball and place in a bowl with covering for 20 – 30 minutes resting in warm area on counter.

Reshape it folding and tucking dough and set it in round bowl, smooth side down. Cover for 8 – 10 hrs or over night.
Preheat oven to 400 degrees. Bake in covered Dutch oven. Make slits on top of bread dough before adding to oven. Remove top after 30 min, continue baking for additional 20 min. Remove from oven and cool bread on baking rack.






Recipe: makes 2 pie crust
2 1/2 c flour 1 tsp salt 1-2 tbl sugar (optional) 1 cup cold butter 6-8 tbs cold water
You can mix by hand or use stand up mixer.
Add dry ingredients into bowl and mix evenly. Slowly add butter cut into small pieces. Blend together until crumbly and start adding water.








When you are ready to make a pie, remove one or two pie crust the night before and place in refrigerator. You may also allow to thaw for about an hour before adding pie filling. Bake pie at 350 degrees for about 40 min. Place foil over pie while baking, to prevent burning, until last 10 min. This will allow crust to finish baking. Enjoy!!

This past year I have fallen in love with bread making. Something very spiritual comes over me. I think about breaking of the bread at the last supper. So when serving my family warm bread from the oven, it fills my heart every time.
Sour dough is a different type bread that has a unique flavor of its own that I prefer. I can hardly eat regular bread now. I am so spoiled. One of my favorite meals is simply homemade soup of any kind with homemade bread. I hardly even buttered the bread due to the unique flavor.
In this process, the starter will be capturing natural yeast from the air. This is what has been done for generations. They have passed it down to family members. Who knew?! So, I had to know more on this very fun way to bake bread without yeast.
To begin you will need a glass jar or bowl preferably. I am sure plastic would work, but I prefer a jar.
Day one: mix 1/2 c of flour and purified water equal parts. Cover with lid lightly, Leave on counter to begin souring process.
Day two: remove 1/4 c of mixture and “discard” into another container or you may throw it out. Add 1/2 c of flour and water to mixture. Cover with lid lightly.
Day three to eight: repeat day 2. Each day you will see the bubbles in the starter.
The “discard” you may add to other fun recipes, such as pancake, waffles, or other baked goods.
Day 8: The starter is ready! Congratulations!
You can now bake your sourdough bread using your starter.
A few thoughts…when you begin baking your first few loaves of bread, you may add a tsp of yeast. I have also to added a tsp of sugar to feed starter.
After a few weeks of fermentation, and also based on humidity, along with temperature of your home, you should not need to add additional ingredients.
Notes: sour dough starter can be stored in refrigerator for up to two weeks. I will feed it at least once a week. When making bread, I take out of refrigerator and set on counter for a few hours. Also feeding it with 1/2 c of flour and water. After it has fermented or bubbles up, I will begin making my recipe.




I share my starter with others a 1/2 cup at a time. Which means, before giving it away I add 1 cup of flour and water to have enough reserve for me.

One pot is all you need. My family prefers the bow tie pasta. We also use the spaghetti sauce recipe that is on my blog.

Recipe:
Minimal ingredients that I are use below, you can add anything else that you prefer. Meat fresh veges etc.
12 oz bow tie pasta 2 16 oz cans tomato sauce or your favorite type of pasta sauce 1/2 c -1 c mozzarella cheese







Oh what to do with those excess tomatoes! I actually had so many extra, that I decided to roast them in the oven. Simple and a fun treat!


Bake at 350 degrees for 20 minutes or until they are roasted to desired texture. Do not over cook. Let them cool down completely.
I so enjoyed eating these as a snack. Natureβs candy indeed! Another option is to blend in a high speed blender, I used a vitamix. Serve over favorite pasta!
You may use larger tomatoes. You will need to slice them in half or quarters before roasted. Enjoy!

A super fun and easy recipe that I use for pizza and calzones.

Preheat oven or air fryer at 350 degrees.
1/3 c nonfat Greek yogurt
1/2 c baking flour

Mix ingredients together. Form dough into a ball.

Roll out on flour surface.





Recipe:
1/2 c baking flour (if you donβt have this, you can add 1/4 tsp salt w 1 tsp baking powder) 1/3 c nonfat yogurt mix together. Form dough into ball. Roll it out onto flour surface into thickness you desire. Add sauce along with cheese and favorite toppings.
Calzone: Roll out into a circle. Top half of the dough with sauce and ingredients. Fold over half the dough and pinch together the ends.
Bake until golden brown.
You can also get super creative by using apple filling, or any flavor pie filling and make turnovers. When baked and cooled , add favorite glaze on top.

1 tsp garlic powder
1 tsp oregano
1 tsp Italian seasoning
1-2 tsp sugar (optional)
(Of course add any of your favorite ingredients) π
Mix all ingredients together on low to medium heat. Pour over favorite noodles or use as pizza sauce. Servings 2-4, depending on what your making! I will also freeze any left that I am not using.

Some days you just need a bit of chocolate. Okay, most days. π One of my quick and easy desserts is melted chocolate with peanut butter. One or two will make me happy and I am satisfied.
