Roasted Cherry Tomatoes

Oh what to do with those excess tomatoes! I actually had so many extra, that I decided to roast them in the oven. Simple and a fun treat!

Sprinkle on olive oil, salt, garlic powder.

Bake at 350 degrees for 20 minutes or until they are roasted to desired texture. Do not over cook. Let them cool down completely.

I so enjoyed eating these as a snack. Nature’s candy indeed! Another option is to blend in a high speed blender, I used a vitamix. Serve over favorite pasta!

You may use larger tomatoes. You will need to slice them in half or quarters before roasted. Enjoy!
