Vegan Chocolate Chip Cookies

One of my favorite ways to make chocolate chip cookies is with Oatmeal flour. I grind my oats into flour. I prefer a finer texture of my oats. I added 2 scoops of my favorite Vanilla protein powder called Love and Peas. Tired of buying bars from the store, motivated this recipe. It made over two dozen cookies!

1.5 cups of oat flour 2 scoops vanilla protein powder 1 tsp baking powder 1/2 c mini chocolate chips 1 tsp sea salt 1 tsp ground flax meal & 3tbls water 1/3 c date paste 1/3 c applesauce 1/3 c almond butter 1 tsp vanilla mix all dry ingredients, then add wet. Easy Raisin Bread recipe for bread machine

Love making bread in my bread machine. Just dump ingredients and follow directions of your manufacturer instructions.
Recipe as follows: 1 c water at 110 degrees
2tbls butter
2 tbl cinnamon
2 tsp honey
1 tsp salt
1 egg at room temp (optional)
3 c flour, all purpose
2 1/2 tsp of yeast
1 c raisins

Turn on bread machine. Add raisins after mixing cycle which about 20-30 mins.

I add wet ingredients in bread machine bucket. After I add dry ingredients. Check you bread machine instructions for your particular bread machine directions. Enjoy!!

Easy Chocolate Nice Cream!!

Dairy Free Chocolate Nice cream

In a blender add 3 frozen bananas, 1 tsp unsweetened chocolate powder, add stevia to taste. Add 1/4 c water or a bit more to get the Perfect blend!! I topped with pecans and dates. Enjoy!! Servings 2. WW points 2

Avocado Raspberry Mousse 3 ingredients

One of my favorites! So simple to make as well. All you need is 1 avocado 🥑, 1 c frozen raspberries and 4 drops of stevia. You can add much as you need to you own taste. All ingredients go into food processor and blend well. Top with walnuts or banana! Enjoy!!

Easy Quick Hummus

Easy quick Hummus!

1 can of chick peas drained and rinse w water. 1-2 garlic, fresh 1/2 juiced lemon 1/4 c peanut butter. salt to taste

Blend chick peas and garlic in food processor. Add peanut butter and mix for a minute or two. Add lemon juice. Add 1/8 -1/4 cup of water to blend into creamy texture. Then top with salt. Enjoy!!

Easy Apple Pie

6-7 cups of green apples peeled/sliced 1/2 c sugar plus 2 packets of stevia 2 TBL flour 1 tsp cinnamon Mix all ingredients together in large bowl. Add to 9” pie crust plate. Top with pie crust. Seal pie crust edge. Flute top of pie crust. Bake 350 degrees for 45 minutes. Cover with foil for 30 min. Last 15 min bake pie crust uncovered until crust is done and lightly brown.

Add dry ingredients to sliced apples and add mixed ingredients to pie crust in pie plate. (Easy Pie Crust recipe listed on blog)
Add pie crust over apples and pinch edges together and flute.
Bake in preheated oven at 350 degrees. Cover with foil for 30-35 minutes. Remove foil and continue to bake 15 min or until pie crust is lightly brown. Cool and serve!

NiceCream

This is one of my most favorite desserts/ smoothie bowl or Nice cream!

Recipe 2 frozen bananas 1 c frozen strawberries vanilla protein powder (I use ) about 1/4 c water A few drops of stevia

Blend together in high speed blender.

Top with …Serve in bowl and share!

Declutter Challenge (day 1 through the 14th)

105 items gone!

I believe items multiple in my home. Mindless clutter seems to be everywhere. I have been reducing, ridding and repurposing for about 5 years. Before I knew it I have many years of accumulated stuff! I wanted to free my time to live in the moment verses hanging onto things I don’t need or use. It is a win for my future plans of being present instead of weighed down by non functioning items. So, I believe you have to find “why” and what works for you. What works for me at this time, is a few items a day or the good ole timer. I have used my timer since being in college to do work and study. Setting my timer for thirty minutes seemed super easy to get the task done and it worked for me!

Also, call ☎️ a friend to join you in decluttering. Keep each other accountable. On your first day of decluttering you rid one item. Second day, 2 items, 3rd day-3 items all the way to the 14th of the month. So by the last day you would have decluttered 105 items!! And yes, you can add more if you wish. Keeping it simple and fun can make a difference. You can invite family members into this challenge by asking for them to declutter one or two items to add to your pile, especially on days 10 through 14. Let’s do this!!

Easy bread in Bread Machine. 5 ingredients

Recipe: 1 1/2 c water (lukewarm) 3 1/2 – 4 c flour 2 Tsp salt package of yeast 2-3 Tbls Olive oil
Add warm water and olive oil
Add flour, then yeast and salt
Follow manufacturer’s directions of your personal bread machine. On mine, I Push start to begin on bread machine you will find light or dark for bread crust. My machine has a setting for bread dough or pizza dough too.
It is mixing!
It’s finished baking. Let it cool down and slice for sandwiches!! It takes a while but the biggest benefit is you dump the ingredients and close the lid. I try to begin first thing in the morning. If you don’t have a bread machine, ask a neighbor or relatives. I have seen a few at second hand stores. Give it a try!!
